Since beginning his career at the age of 15 in his native Finland, Head Chef Janne Ollikainen has worked at luxury hotels throughout Southeast Asia, picking up numerous awards along the way.
I’m inspired by the places I travel to, the things I read, the people I meet. These all help me to come up with new ideas and to create original and exciting dishes. One of my earliest inspirations was when I was working as a young chef in Lapland, using ingredients we found in the wild, and coming up with new recipes to bring out the best of their flavours and textures. Fresh, unprocessed produce still gives me inspiration today. My team and I are committed to social and environmental responsibility – our goal being to make dining a memorable experience for our guests.
